Chocolate marshmallow cupcakes
Easter is very close now and every year I make a treat for the security guards at my place of work. They are a really jolly lot of people and I like to show them that I appreciate them every now and then.
This year, I have made them these delicious chocolate marshmallow cupcakes which I have iced with chocolate milk ganache.
These cupcakes are really delicious as an Easter treat. You can use any chocolate cupcake recipe and put three small marshmallows or 1/2 of a big one into the cupcake holder before you add the mixture. Do not overfill the cupcake holders as the marshmallows swell in the oven.
I iced the cupcakes with chocolate milk ganache as follows:
80 ml of whole milk;
210 grams of milk chocolate cut into small pieces or grated.
Bring the milk to the boil and then add the chopped chocolate. Whisk until the mixture is smooth and creamy. It will be thick. Spoon over the cupcakes. Do not add to much as it spreads.
